This is an interesting point. Is it possible that you can leave the
current material, but add to it your comments that you want to leave
the business (don't state why), then include a direct quote from their
threats? If you have a written letter or an email you can cite (and
keep for proof), that could help.
Yes, they'll pitch a fit, but if you have the emails or letters (and if
you print the emails, make sure you print the headers too), then all
you're doing is quoting them.

And, as Deb said, beforehand, file appropriate complaints with local
regulatory agencies. Once they get involved, the bad guys will likely
back down because they don't want to deal with those issues. It's
easier for them to let you go than to fight the state.
